Rosemary-Garlic Focaccia is a soft, airy Italian bread with a crispy golden crust, infused with the rich flavors of fresh rosemary, garlic, and olive oil.

This homemade focaccia is perfect as a side dish, appetizer, or sandwich base. With its deliciously dimpled surface and savory aroma, it’s a must-try for bread lovers and a great addition to any meal! 🍞🌿✨

Ingredients

  • 500g (4 cups) all-purpose flour

  • 10g (2 tsp) salt

  • 7g (2 1/4 tsp) instant yeast

  • 325ml (1 1/3 cups) warm water

  • 60ml (1/4 cup) extra virgin olive oil, plus more for drizzling

  • 3 cloves garlic, minced

  • 2 tbsp fresh rosemary, chopped

  • 50g (1/2 cup) grated Parmesan

  • 50g (1/3 cup) sun-dried tomatoes, chopped

  • Flaky sea salt, for topping

Step by Step Instructions

Step 1

Prepare the Dough & First Rise:

In a bowl, mix flour, salt, and yeast. Add warm water and olive oil, then mix until a sticky dough forms.

Knead for 8-10 minutes until smooth. Place the dough in a greased bowl, cover, and let it rise for 1-2 hours until doubled in size.

 

Step 2

Shape & Second Rise:

Grease a baking sheet with olive oil and stretch the dough into a rectangle or oval about 2 cm (3/4 inch) thick.

Let it rest for 20-30 minutes while preparing the toppings.

 

Step 3

Add Toppings:

In a small bowl, mix minced garlic, rosemary, and olive oil.

Use your fingers to create dimples in the dough, then drizzle with olive oil and spread the garlic-rosemary mixture over the surface.

Sprinkle with Parmesan, sun-dried tomatoes, and flaky salt.

 

Step 4

Bake & Serve:

Preheat oven to 220°C (425°F) and bake for 20-25 minutes, until golden brown and crispy.

Let cool slightly before slicing. Serve warm with extra olive oil for dipping!
