Ingredients

  • 1 and a half packages of lasagna sheets
  • 4-5 zucchinis, sliced lengthwise or crosswise
  • 2 fresh tomatoes, chopped
  • 1 onion, finely diced
  • 4 cloves of garlic, minced
  • 1000g  tomato passata (strained tomatoes)
  • 350g crème fraîche
  • Splash of water
  • Salt, pepper and oregano to taste
  • Olive oil for cooking

 

 

 

 

    Step by Step Instructions

    Step 1

    In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and the garlic is fragrant.

    Add the tomato passata to the skillet, along with the chopped fresh tomatoes and a crème fraîche. Stir well to combine.

    Reduce the heat to low and let the sauce simmer for about 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

    Preheat your oven to 180°C (350°F).

    Step 2

    Spread a thin layer of the tomato sauce on the bottom of a 40x28cm (approximately 16×11 inch) baking dish.

    Place a layer of lasagna sheets over the sauce, making sure to cover the entire bottom of the dish.

    Spoon some tomato sauce over the lasagna sheets, followed by a layer of cooked zucchinis. Repeat this layering process until you run out of ingredients, finishing with a layer of lasagna sheets on top.

    Step 3

    Pour a splash of water evenly over the top layer of lasagna sheets.

    Cover the baking dish with aluminum foil and bake in the preheated oven for about 30-40 minutes, or until the lasagna sheets are cooked through and the top is golden and bubbly.

    Step 4

    Remove the foil and let the lasagna rest for a few minutes before serving.

    Slice and serve your delicious zucchini and tomato lasagna while it’s still warm. Enjoy!

    Note: Feel free to add grated cheese, such as mozzarella or Parmesan, between the layers if desired. You can also customize the seasoning by adding herbs like basil or oregano to the tomato sauce.
