Brownie Base:
Dry Ingredients:
- 1 cup (120g) all-purpose flour
- 1 tsp baking powder
- 1 tsp gingerbread spice mix (if unavailable, mix 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground cloves, and 1/8 tsp ground nutmeg)
- Pinch of salt
Wet Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) dark brown sugar
- 1/4 cup (60ml) molasses or honey
- 2 large eggs
- 1 tsp vanilla extract
Frosting:
- 250g unsalted butter, softened (1 package)
- 250g powdered sugar, sifted
- 170g quark
- 1-2 tbsp milk or cream
- Green gel food coloring
Step by Step Instructions
Step 1
Make the Brownie Base
Preheat the oven to 175°C (350°F). Grease and line a 22–23 cm (9-inch) round cake pan. In a bowl, whisk together flour, baking powder, gingerbread spice mix, and salt. In another bowl, mix melted butter and sugar until smooth. Add molasses (or honey), eggs, and vanilla. Gradually fold the dry ingredients into the wet mixture until combined. Pour batter into the pan and smooth the top.

Bake
Bake for 25–30 minutes or until a toothpick comes out with moist crumbs. Let the cake cool completely in the pan before removing.
Step 3
Prepare Frosting
Beat softened butter until creamy. Gradually mix in powdered sugar. Add quark and beat until smooth. Adjust with milk for spreadable consistency. Mix in green gel food coloring until evenly tinted.
Step 4
Assemble and Decorate
Cut the cooled brownie into 8–12 triangles. Generously frost one side of each triangle with green frosting. Decorate with sprinkles or candies as desired. Insert a stick at the base for a “tree trunk” and serve.
