Ingredients

  • 400g spaghetti
  • 400g mushrooms, washed and sliced
  • 5 cloves garlic, minced
  • 5 spring onions, chopped
  • Handful of fresh parsley, chopped
  • 2-3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon paprika
  • 2 teaspoon curry powder

    Step by Step Instructions

    Step 1

    Cook the spaghetti according to package instructions until al dente. Reserve a few tablespoons of the cooking water before draining the spaghetti.

    Step 2

    In a large pan, heat olive oil over medium heat.

    Add minced garlic, chopped spring onions, and sliced mushrooms to the pan. Sauté until mushrooms are browned and tender.

    Step 3

    Season with salt, black pepper, ginger powder, paprika, and curry powder. Stir well to combine.

    Add a few tablespoons of reserved pasta water to the pan and let it simmer for a minute to create a sauce.

     

    Step 4

    Drain the cooked spaghetti and add it to the pan with the mushroom mixture.

    Step 5

    Toss the spaghetti and mushroom mixture together until well combined.

    Sprinkle chopped fresh parsley over the top and mix again.

    Step 6

    Serve hot, garnished with additional parsley if desired.
