This simple cherry spread is a delightful and easy-to-make addition to your breakfast or snacks. Made with fresh, seasonal cherries, brown sugar, and a hint of vanilla, it captures the sweet and tart flavors of summer. Ingredients

  • 400g fresh cherries, pitted and halved
  • 80g brown sugar
  • Juice of half a lemon (approximately 1 tablespoon)
  • 5ml vanilla extract (approximately 1 teaspoon)

      Step by Step Instructions

      Step 1

      Prepare the Cherries:

      Rinse, pit, and halve the fresh cherries.

      Cook the Cherries:

      Place the cherries in a medium saucepan over medium heat.

      Add 80g of brown sugar and the juice of half a lemon to the saucepan.

      Stir well to combine.

      Step 2

      Simmer the Mixture:

      Bring the mixture to a gentle simmer, stirring occasionally.

      Let it cook for about 15-20 minutes, or until the cherries have softened and released their juices. The mixture should start to thicken.

       

      Step 3

      Blend (Optional):

      For a smoother spread, use an immersion blender to blend the cherry mixture until it reaches your desired consistency. You can also use a regular blender or food processor, but let the mixture cool slightly before blending.

       

      Step 4

      Add Vanilla:

      Stir in 5ml of vanilla extract for added flavor.

       

      Step 5

      Cool and Store:

      While the cherry spread is still hot, transfer it to a sterilized glass jar.  Ensure the glass jar and lid are properly sterilized before use.

      Seal the jar with a lid and turn it upside down for 5-10 minutes to ensure good sterilization and create a vacuum seal.

      Allow the jar to cool completely.

      Store in the refrigerator for up to two weeks.
