This is one of my favourite lunch recipes when it has to go quick. I make this on a regular bases, it´s very easy and soooo good 🙂

Ingredients

300 g pumpkin cubes
3
cloves of garlic
1
onion
200 g
mushrooms
3 tbsp
oil
250 g
Basmati Rice
100 ml
wine (red or white)
1 Cube
vegetable broth ( 11 g)
1.5 tsp
salt
1 tsp
pepper
3 tsp
basil, dried
400- 450 ml
water

    Step by Step Instructions

    Step 1

    Wash the pumpkin, halve, remove the seeds, cut in cubes, weigh. It does not need to be peeled.

    Step 2

    Peel and dice the onion and garlic cloves. Wash the mushrooms and cut into slices.

    Step 3

    Heat oil in a pan and fry the pumpkin, onion, garlic and mushroom for about 10 minutes. Add salt, pepper, basil, and vegetable cubes, drain with wine.

    Step 4

    Add the rice and water, stir and simmer covered for 20 minutes.
