Pumkin hummus
Creamy pumpkin hummus. Perfectly served with warm and fresh dark bread or as a dip for raw vegetable slices.

Ingredients
- 500g pumpkin cubes
- 1 large onion
- 1 glove garlic
2 tbsp pumpkin seed oil - 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp dried basil
- 1 tsp paprika powder, sweet
- 50ml oat milk
- Some olive oil
- Juice from one lemon
- Some Pumpkin Seeds
Step by Step Instructions
Step 1
1. Wash the pumpkin, cut into halves, remove the seeds, dice. Peel the onion and garlic then Quarter an Onion.
Step 2
Place the pumpkin and onion on a baking tray, drizzle with olive oil, sprinkle with paprika powder and a dried Basil. Bake in the preheated oven to 180 degrees for 20 minutes.
Step 3
Meanwhile, squeeze the Lemon.
Step 4
Place the baked pumpkin and onion, garlic, lemon juice, pumpkin seed oil, salt, pepper and oat milk in a food processor and mix until smooth. Garnish with pumpkin seeds.
