Here is one of my recipes made last Autumn. Pumpkin 🎃 hummus. The recipe also includes garlic, salt, pepper and basil. It’s very simple and tasty!

Ingredients

  • 500g pumpkin cubes
  • 1 large onion
  • 1 glove garlic
    2 tbsp pumpkin seed oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried basil
  • 1 tsp paprika powder, sweet
  • 50ml oat milk
  • Some olive oil
  • Juice from one lemon
  • Some Pumpkin Seeds

Step by Step Instructions

Step 1

1. Wash the pumpkin, cut into halves, remove the seeds, dice. Peel the onion and garlic then Quarter an Onion.

Step 2

Place the pumpkin and onion on a baking tray, drizzle with olive oil, sprinkle with paprika powder and a dried Basil. Bake in the preheated oven to 180 degrees for 20 minutes.

Step 3

Meanwhile, squeeze the Lemon.

Step 4

Place the baked pumpkin and onion, garlic, lemon juice, pumpkin seed oil, salt, pepper and oat milk in a food processor and mix until smooth. Garnish with pumpkin seeds.
