Ingredients

  • 450 g all-purpose flour (you may need a bit more, depending on the moisture of the pumpkin purée)
  • 200 g pumpkin purée
  • 7 g (1 packet) instant yeast
  • 2 tsp sugar (8 g)
  • 1 tsp salt (5 g)
  • 60 ml milk (room temperature)
  • 1 egg (room temperature)
  • 40 g butter (softened)
  • 150-200g feta cheese, diced

    Step by Step Instructions

    Step 1

    Prepare the Dough:

    In a large mixing bowl, combine the flour, yeast, sugar, salt.

    In another bowl, mix together the pumpkin purée, milk, and egg.

    Gradually add the wet ingredients to the dry ingredients and mix until it forms a dough. It may seem a bit sticky at first, but it will firm up as you knead.

    Step 2

    Knead the Dough:

    Transfer the dough to a floured surface and knead for about 8-10 minutes, adding a little more flour as needed until the dough is smooth, elastic, and slightly tacky but not sticky. If the dough is still too sticky, add more flour 1 tablespoon at a time.

    Add the Butter:

    Gradually add the softened butter while continuing to knead. The dough may become sticky again, but keep kneading and adding a little more flour if needed until it’s well-incorporated and smooth.

     

    Step 3

    Let it Rise:

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.

    Step 4

    Form the Pumpkins:

    Once the dough has risen, punch it down and divide it into small portions.

    Flatten each dough portion, place a cube of diced feta cheese in the center, and then fold the dough around the cheese to form a round ball.

    Proceed to form the dough balls into pumpkin shapes using  jute string or kitchen twine, making sure to tie it loosely so the dough has room to expand.

    Final Rise:

    Let the shaped dough balls rise for another 20-30 minutes before baking.

    Bake:

    Preheat the oven to 180°C (350°F) and bake the pumpkin-shaped rolls for 15-20 minutes, or until golden brown.
