This homemade ananas ice cream is a delicious and healthy treat, perfect for guilt-free indulgence. Made with fresh pineapple, it is packed with vitamins, minerals, and antioxidants, particularly vitamin C, which boosts the immune system and promotes healthy skin. The use of coconut milk instead of dairy makes it suitable for those who are lactose intolerant or following a vegan diet, adding a rich, creamy texture without the need for heavy cream.

Ingredients

  • 1 fresh pineapple
  • 3 tablespoons coconut milk (from a can)
  • Sweetener to taste (honey or maple syrup)

      Step by Step Instructions

      Step 1

      Prepare the Pineapple:

      Cut the pineapple in half lengthwise.

      Carefully cut around the edge of the pineapple flesh, leaving a border of about 1 cm.

      Cut out the core and discard it.

      Scoop out the pineapple flesh and cut it into cubes .

      Reserve the pineapple shells for later use. 

      Step 2

      Freeze the Pineapple:

      Spread the pineapple cubes on a baking sheet in a single layer.

      Freeze the pineapple cubes for at least 2-3 hours, or until completely frozen.

       

      Step 3

      Blend the Ice Cream:

      Once the pineapple cubes are frozen, place them in a blender.

      Add 3 tablespoons of coconut milk.

      Add sweetener to taste (start with 1-2 tablespoons of honey or maple syrup and adjust as needed).

      Blend until smooth and creamy, stopping to scrape down the sides of the blender if necessary.

      If the mixture is too thick, add a bit more coconut milk, one tablespoon at a time, until you reach the desired consistency.

       

      Step 4

      Fill the Pineapple Shells:

      Spoon the blended pineapple ice cream back into the reserved pineapple shells.

      Smooth the top with a spatula.

      Garnish with shredded coconut or fresh mint leaves for extra flavor and presentation.
