This vibrant and creamy dessert combines the natural sweetness of peaches, the tang of yogurt, and a hint of citrus from orange juice and lemon juice. Layered in charming mini molds, these jellies set perfectly to create a beautiful, light, and delicious treat that’s perfect for any occasion.

Ingredients

  • Peaches: 4-5 medium-sized, chopped (about 500g)
  • Sugar: 100g
  • Gelatin Powder: 2 packets (sufficient for 1000ml liquid, usually about 20g)
  • Orange Juice: 60ml (for blooming gelatin)
  • Yogurt: 240ml
  • Additional Orange Juice: 120ml
  • Lemon Juice: 30ml (2 tablespoons)

      Step by Step Instructions

      Step 1

      Prepare the Peach Juice:

      Blend the chopped peaches until smooth. If needed, add a little water to help with blending.

      Strain the blended peaches through a fine mesh sieve to extract the juice, discarding the pulp. You should have around 360ml of peach juice.

      Step 2

      Bloom the Gelatin:

      In a small bowl, sprinkle the gelatin powder over 60ml of cold orange juice.

      Let it sit for 5 minutes to bloom, until it becomes thick and jelly-like.

       

      Step 3

      Cook the Peach Juice:

      In a medium saucepan, combine the peach juice and 100g of sugar. Stir over medium heat until the sugar dissolves completely.

      Remove from heat and let it cool slightly.

      Once the peach juice mixture is warm (not hot), add the bloomed gelatin.

      Stir continuously until the gelatin is completely dissolved. Ensure the mixture is warm enough to dissolve the gelatin but not boiling or too hot.

       

      Step 4

      Mix with Yogurt:

      In a large bowl, combine the dissolved gelatin mixture with 240ml of yogurt, an additional 120ml of orange juice, and 30ml of lemon juice.

      Mix thoroughly until well combined.

      Pour the peach-yogurt gelatin mixture into mini Gugelhupf molds.

      Allow the mixture to cool to room temperature before transferring the molds to the refrigerator.

      Step 5

      Chill, Unmold and Serve:

      Chill in the refrigerator for at least 4 hours, or until the gelatin is fully set.

      To unmold, gently run a knife around the edges of the molds, if necessary. Carefully invert the molds onto serving plates.

      Optionally, garnish with mint leaves or fresh peach slices for an extra touch.
