Ingredients

  • Biscuits/Cookies: 70g
  • Pistachios: 15g
  • Butter: 40g (adjusted amount)
  • Sugar: 10g (for biscuit mixture)
  • Vanilla Paste: 5ml (1 teaspoon)
  • Peaches: 2 medium-sized, chopped (about 250g)
  • Maple Syrup: 60ml
  • Orange Juice: 50ml
  • Ground Cinnamon: 2.5g (1/2 teaspoon)
  • Vanilla Extract: 2.5ml (1/2 teaspoon)
  • Yoghurt: 150ml (your choice of flavor)

      Step by Step Instructions

      Step 1

      Prepare the Biscuit-Pistachio Base:

      Process the biscuits/cookies and pistachios in a food processor until finely ground.

      Add the melted butter, 10g of sugar, and 5ml of vanilla paste to the ground mixture. Mix until well combined.

      Press the mixture firmly into the bottom of your small glasses to form a solid base. Set aside.

      Step 2

      Cook the Peaches:

      In a pot, combine the chopped peaches, 60ml of maple syrup, 50ml of orange juice, 2.5g of ground cinnamon, and 2.5ml of vanilla extract.

       

      Step 3

      Cook over medium heat, stirring occasionally, until the peaches soften and the mixture thickens (about 10-15 minutes). Let it cool slightly.

       

      Step 4

      Assemble the Dessert:

      Spoon the peach mixture over the biscuit-pistachio base in the glasses.

      Add a layer of your chosen yoghurt on top of the peaches.

       

      Step 5

      Chill and Serve:

      Chill the glasses in the refrigerator for at least 1 hour.

      Optionally, garnish with crushed pistachios or a slice of fresh peach before serving.
