Ingredients

Crust:

  • 130g butter cookies, crushed
  • 50g granulated sugar
  • 85g unsalted butter, melted

Filling:

  • 600ml coconut milk
  • 150g granulated sugar
  • 1 lemon, zested and juiced
  • 2-3 tsp blue spirulina powder (adjust for desired color)
  • 7g vanilla sugar
  • 15g agar-agar powder
  • 3 tbsp wheat flour or cornstarch

Topping:

  • 130g dark or milk chocolate
  • 1 tbsp coconut oil
  • fresh or frozen blueberries

      Step by Step Instructions

      Step 1

      Prepare the Crust:

      In a food processor, combine the butter cookies and sugar.  Add the soft or melted butter to the food processor and pulse until the mixture comes together and resembles wet sand.

      Press the mixture into the bottom of a 15cm springform pan, ensuring it is evenly distributed and compacted.

      Chill the crust in the refrigerator while you prepare the filling.

       

      Step 2

      Prepare the Filling:

      In a small bowl, mix the wheat flour or cornstarch with 3 tbsp of coconut milk to make a smooth slurry. Set aside.

      In a medium saucepan, combine the remaining coconut milk, sugar, lemon zest, and lemon juice.

      Stir in the agar-agar powder and bring the mixture to a gentle boil over medium heat, stirring constantly to dissolve the agar-agar and sugar.

      Once it reaches a boil, reduce the heat and let it simmer for 2-3 minutes.

      Stir in the wheat flour slurry and continue to cook, stirring constantly, until the mixture thickens, about 2 minutes.

      Remove from heat and let it cool slightly, then add the blue spirulina powder, stirring until the color is evenly distributed. Adjust the amount of spirulina to achieve your desired shade of blue.

       

      Step 3

      Assemble the Cake:

      Pour the panna cotta mixture over the chilled crust in the springform pan, smoothing the top with a spatula.

      Refrigerate for at least 4 hours, or until fully set.

       

      Step 4

      Prepare the Topping:

      Melt the chocolate with coconut oil in a small pot.

      Let the melted chocolate cool slightly before using.

       

      Step 5

      Add the Topping:

      Once the panna cotta is set, remove it from the refrigerator.

      Carefully remove the springform pan.

      Pour the melted chocolate over the top of the cake, allowing it to drip down the sides for a decorative effect.

      Arrange the blueberries on top of the melted chocolate.

      Refrigerate again for half an hour before serving. This will allow the chocolate topping to set slightly and make slicing easier.
