The process of drying tomatoes can be traced back to ancient civilizations, particularly in the Mediterranean region where fresh produce was often preserved through sun-drying.

However, with the advent of modern ovens and dehydrators, it’s become much easier to dry tomatoes at home.

Dried tomatoes are not only a great way to extend the shelf life of your favorite tomato varieties, but they are also a delicious and versatile ingredient that can be used in a variety of recipes, from salads and pasta dishes to sandwiches and appetizers.

 

 

Ingredients

 

  • Small tomatoes
  • Salt
  • Dried oregano

 

 

 

    Step by Step Instructions

    Step 1

    Preheat your oven to 95°C and line a baking sheet with parchment paper.

    Step 2

    Wash and dry the mini tomatoes, then cut them in half.

    Step 3

    Arrange the tomato halves on the prepared baking sheet.

    Sprinkle the tomatoes with a pinch of salt and some herbs (such as dried oregano or thyme) for added flavor.

    Step 4

    Place the baking sheet in the preheated oven and bake the tomatoes for 4-6 hours, depending on the size of the tomatoes and your desired level of dryness.

    It’s important to leave the oven door slightly open while they’re baking. Place a wooden spoon or other heat-resistant object between the door and the oven frame. This will create a small gap that allows air to circulate and prevent moisture from accumulating inside the oven.

     

    Step 5

    Once the tomatoes are dry and slightly shriveled, remove them from the oven and let them cool completely on the baking sheet.

    Step 6

    Store the dried tomatoes in an airtight container in a cool, dry place for up to several months.
