Ingredients
- 1/2 red bell pepper, cut into strips
- 2 eggs
- Salt and pepper to taste
- Paprika (optional)
- 1 spring onion, finely chopped
- Parmesan cheese (grated)
- 1 large wrap or tortilla
- Handful of arugula (rucola) salad
- Broccoli sprouts

Step by Step Instructions
Step 1
Begin by heating a bit of oil in a pan over medium heat.
Add the red bell pepper strips and fry them for a few minutes, turning occasionally, until they’re tender and slightly caramelized.
Step 2
In a bowl, beat the eggs and season them with a pinch of salt, pepper, and paprika (if desired).
Step 3
In the same pan, add a little more oil if needed, and then pour in the beaten eggs. Allow them to cook without stirring, just like an omelette.
While the eggs are still slightly runny on top, add the finely chopped spring onion and a generous sprinkle of grated Parmesan cheese to the omelette.
Step 4
Place the wrap on top of the cheese and spring onion side of the omelette. Press it gently to help it stick.
Allow the wrap to cook for a few minutes, so it warms up and adheres to the omelette.
Step 5
Slide the wrap sandwich onto a plate.
Fill the wrap with a handful of arugula salad and a generous portion of broccoli sprouts.
Step 6
Carefully roll the wrap around the salad and sprouts, folding in the sides to make a secure sandwich.
Slice in half if desired and serve your delicious and nutritious wrap sandwich.
