This oat cookie recipe is a guilt-free delight, with the natural sweetness of cranberries eliminating the need for any added refined sugar.
Packed with wholesome oats and the natural goodness of cranberries, these cookies make for a perfect on-the-go snack, providing a satisfying treat without compromising on health.

Ingredients
- 70-100g dried cranberries
- 100ml maple syrup
- 500g rolled oats (toasted for about 10 minutes, stirring occasionally)
- 50g butter
- 3 eggs
- 250-300 ml milk
- 1.5 tsp baking powder
Step by Step Instructions
Step 1
Preheat the oven to 180°C (356°F).
Step 2
In a pan, toast the oats with butter and maple syrup for approximately 10 minutes, stirring occasionally, until slightly golden.
Step 3
In a large bowl, combine the toasted oats, dried cranberries, eggs, milk, and baking powder to form a cohesive mixture using a spoon.
Optionally, add sugar to taste if desired.
Step 4
Form the mixture into cookie shapes and place them on a baking sheet.
(I shaped the dough into round forms using an ice cream scoop, placed them on a baking tray, and then gently pressed them into cookie shapes.)
Step 5
Bake in the preheated oven for 15 minutes or until golden brown.
Step 6
Allow the cookies to cool on a wire rack before serving.
