Ingredients
- 550g sweet potato, peeled and roughly chopped
- 50g pecans
- 50g hazelnuts
- 130g dates, pitted
- 230g oats
- 70g agave syrup
- 80g almond butter
- 15g coconut oil (solid)
- Pinch of salt
- 150g ground flax seeds
- 40g raw cocoa powder
Topping:
- 1/2 can coconut milk
- 2 tbsp raw cocoa powder
- 2 tbsp agave syrup
- Extra pecans for garnish
Step by Step Instructions
Step 1
Cook the Sweet Potatoes:
Peel and roughly chop the sweet potatoes.
Cook them in a pot of boiling water until soft (about 10-15 minutes). Drain and let cool slightly.
Step 2
Prepare the Base:
In a food processor, grind the pecans and hazelnuts until fine.
Add the cooked sweet potatoes, dates, oats, agave syrup, almond butter, coconut oil, salt, ground flax seeds, and raw cocoa powder.
Blend until the mixture is smooth and well combined. The mixture should be firm but sticky.
Step 3
Form the Brownies:
Line a 19×25 cm (7.5×10 inch) baking form with parchment paper.
Press the brownie mixture evenly into the form.
Place the form in the fridge for at least 1 hour to set.
Step 4
Prepare the Topping:
In a bowl, mix the coconut milk, raw cocoa powder, and agave syrup until smooth.
Spread the topping evenly over the chilled brownie base.
Garnish with extra pecans.
Step 5
Chill the Brownies:
Place the brownies back in the fridge for at least 4 hours, or until the topping is thick and set.
Serve:
Cut the brownies into squares and serve chilled. Enjoy!
