Ingredients

For the Bisquit Cake base

  • 4 eggs
  • 170g sugar
  • 170g all-purpose flour
  • 1 tsp baking powder
  • 40g sunflower oil
  • 60g hot water
  • 1 packet vanilla sugar
  • 6g orange zest
  • 1/2 tsp cinnamon
  • For the Quark Mascarpone Cream
  • 600g Quark

  • 350g Mascarpone

  • 150g Powdered sugar (adjust to taste)

  • 1 tsp Vanilla extract or Vanilla sugar

  • Zest of 1-2 organic oranges

  • 200g Mixed berries (blueberries, raspberries, strawberries, etc.)

    Step by Step Instructions

    Step 1

    Preheat your oven to 165 degrees Celsius.

    In a bowl, beat the eggs until fluffy using an electric hand mixer on the highest setting.

    Mix sugar and vanilla sugar, then gradually add to the beaten eggs. Continue beating until the mixture becomes light and fluffy.

    In a separate bowl, mix flour, baking powder, orange zest, and cinnamon.

    Step 2

    Gently fold the dry ingredient mixture into the egg mixture until just combined.

    Mix the hot water with the sunflower oil. Add this mixture quickly but gently to the batter, folding until well combined.

    Step 3

    Line the bottom of a 20cm diameter cake pan with parchment paper. Grease only the sides of the pan. 

    Pour the batter into the prepared cake pan.

    Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

    After baking, leave the cake in the open oven for about 10 minutes.

    Once removed from the oven, let it cool completely in the pan.

    Carefully remove the cake from the pan, wrap it in transparent foil, and refrigerate for several hours or overnight to allow the moisture to evenly distribute.

    Step 4

    For the Cream mix Quark and Mascarpone until smooth.

    Add powdered sugar, vanilla extract and orange zest.

    Step 5

    Now carefully cut horizontally through the cake base, creating two even layers.

    Repeat the process to achieve three equal layers.

    Step 6

    Place the bottom layer on a serving plate or cake stand.

    Evenly spread a generous amount of the prepared cream over the first layer, and then add the berries on top.

    Gently place the second layer on top, repeating the application of cream and berries.

    Add the final layer, completing the cake structure.

    Cover the top of the cake with the remaining cream, spreading it evenly.

    Optionally, frost the sides for a polished appearance.

    Festively adorn the top layer with fewer berries, add mint leaves and any other complementary decorations you have on hand.

    For optimal results, refrigerate the cake for a few hours to allow the layers to set.
