- 150g rolled oats
- 2 ripe bananas (about 240g
- 2 eggs
- 120ml milk (dairy or non-dairy)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
- A pinch of salt
- Cooking oil or butter for the pan
Ingredients for Strawberry Sauce:
- 200g strawberries, hulled and chopped
- Juice of 1/2 orange
- Juice of 1 lime
- 1-2 tbsp honey
Step by Step Instructions
Step 1
Prepare the Pancake Batter:
Peel the bananas and break them into chunks.
In a blender, combine the bananas, rolled oats, eggs, milk, baking powder, vanilla extract, cinnamon (if using), and a pinch of salt.
Blend until the mixture is smooth and well combined. Let the batter sit for a few minutes to thicken slightly.
Step 2
Cook the Pancakes:
Heat a non-stick non-stick pan over medium heat and lightly grease it with cooking oil or butter.
Pour small portions of the batter (about 2 tablespoons per pancake) onto the hot skillet, forming mini pancakes.
