Ingredients
Pumpkin Layer:
- 200g Hokkaido pumpkin puree
- 60g almond flour
- 3 large eggs
- 60g erythritol
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
Chocolate Layer:
- 60g almond flour
- 3 large eggs
- 30g cocoa powder
- 60g erythritol
- 2 tbsp melted coconut oil
- 60 ml almond milk (for smoother consistency)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Optional Topping:
- 30g dark chocolate (85% cocoa or higher), melted with a splash of milk for a smoother drizzle.
Step by Step Instructions
Step 1
Preheat Oven:
Preheat your oven to 180°C (350°F) and grease or line a small loaf pan.
Prepare Pumpkin Layer:
In a medium bowl, mix the Hokkaido pumpkin puree, almond flour, eggs, sweetener, vanilla extract, cinnamon, and baking powder until smooth.
Prepare Chocolate Layer:
In a separate bowl, combine the almond flour, eggs, cocoa powder, sweetener, melted coconut oil or butter, vanilla extract, baking powder, and salt until smooth.

Layer the Batter:
Using an ice cream spoon, place small dollops of the pumpkin batter into the loaf pan. Then, alternate with small dollops of the chocolate batter, layering them until all the batter is used. Continue to alternate the layers in smaller parts.

Create Marble Effect:
Once all the layers are added, gently swirl the batter with a knife in a swirling motion to create a marbled effect.

Bake:
Bake for about 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
