Ingredients

For the Dough:

  • 300 g almond flour
  • 100 g birch sugar (xylitol)
  • 100 g soft butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon powder
  • 1 teaspoon baking powder
  • A pinch of salt
  • 130 g Greek yogurt
  • 50 g raisins (optional)

For the Filling:

  • 4 medium apples (preferably Granny Smith), peeled, cored, and thinly sliced
  • 1-2 tablespoon lemon juice (to prevent browning)
  • A handful of almond slivers for sprinkling on top

    Step by Step Instructions

    Step 1

    Prepare the Apple Filling:

    In a large bowl, toss the apple slices with lemon juice to prevent browning. Set aside.

    Make the Dough:

    In a large bowl, mix the almond flour, birch sugar, cinnamon, baking powder, and a pinch of salt.

    Add the soft butter and mix until crumbly.

    Stir in the eggs, vanilla extract, and Greek yogurt. Mix until a smooth dough forms.

    Fold in the raisins, if using.

    Step 2

    Assemble the Pie:

    Preheat the oven to 180°C (350°F).

    Grease a 30 cm (12-inch) pie pan.

    Reserve a small portion of the dough to use later.

    Press the remaining dough into the bottom and up the sides of the pie pan to form the crust.

    Arrange the apple slices on top of the dough.

    Take the reserved dough and gently spread small pieces of it over the apples.

    Sprinkle almond slivers on top for added crunch and decoration.

     

    Step 3

    Bake:

    Bake for 20- 30 minutes, until the apples are tender and the crust is golden brown.

    After 20 minutes, check for browning. Cover with foil if needed to prevent over-browning.

    Step 4

    Cool and Serve:

    Let the pie cool for 10-15 minutes before serving.

    Serve warm or at room temperature, optionally with a dollop of  Greek yogurt.
