Ingredients
For the Shrimp:
- 1 lb (450g) shrimp, peeled and deveined
- 2 cloves garlic, minced

- Salt and pepper, to taste
For the Bowl:
- 2 medium zucchinis, spiralized into noodles (“zoodles”)
- 1 cup cherry tomatoes, halved
- 1/3 cup olives (green or black), sliced
- Fresh basil leaves, for garnish
- 2 tbsp crumbled feta or Parmesan, for garnish

Prepare the Shrimp:
In a bowl, combine the shrimp with garlic, lemon zest, lemon juice, salt, and pepper. Mix well to coat and set aside for 5 minutes to marinate.
