Ingredients
Cake Base (Single Thick Layer)
- 6 large eggs, at room temperature
- 150 g brown sugar
- 200 g all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
Nougat Cream Cheese Filling:
- 200 ml heavy cream, cold
- 200 g cream cheese, softened to room temperature
- 50 g powdered sugar (or more to taste)
- 1 tsp vanilla extract (optional)
- 100 g nougat cream, warmed until soft and spreadable
Green Sugar Paste Cover
- Pre-rolled green sugar paste disc, 36 cm in diameter and 3 mm thick
- Edible Joker image for decoration
Stabilized Whipped Cream for Purple Piping
- 200 ml cold heavy cream
- 20 g powdered sugar (or to taste)
- 1 tsp whipped cream stabilizer (or cornstarch)
- 1 full tsp blue spirulina powder (for purple color)
Step by Step Instructions
Step 1
Prepare the Cake Base:
Preheat the oven to 180°C (350°F). Grease and line the bottom of a 21 cm (8-inch) round cake pan.
In a large mixing bowl, beat the eggs and brown sugar together on high speed until thick and pale in color (7-10 Minutes).
Sift together the flour and baking powder, then gently fold it into the egg mixture along with the vanilla extract until just combined.
Pour the batter into the prepared pan, smooth the top, and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely, then remove it and cut it in half horizontally to create two layers.
Step 2
Make the Nougat Cream Cheese Filling:
In a mixing bowl, whip the heavy cream until soft peaks form. Set aside.
In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
Fold the warmed nougat cream into the cream cheese mixture until fully combined.
Gently fold the whipped cream into the nougat mixture, being careful not to deflate it.
Step 3
Assemble the Cake:
Spread the nougat cream evenly over the first cake layer, then place the second layer on top, pressing gently to level. Smooth the top if needed.
Chill the assembled cake in the fridge for about 30 minutes.
Step 4
Cover with Green Sugar Paste:
Carefully drape the pre-rolled green sugar paste disc over the chilled cake, letting it fall over the sides. Smooth it down gently and trim any excess.
Step 5
Decorate with Joker Image:
Place the edible Joker image on top, pressing gently so it adheres to the sugar paste.
Step 6
Prepare Stabilized Whipped Cream for Piping:
In a bowl, combine the heavy cream, powdered sugar, and stabilizer.
Add the spirulina powder and whip the mixture until firm peaks form, achieving a light purple color.
Step 7
Finish Decorating:
Using a piping bag with a round tip, pipe small dots around the Joker image, keeping them away from the edges to prevent sliding.
