Ingredients
- 1 kg cherries (washed, cored, and pitted)
- 1 kg sugar
- 20 g citric acid
- Juice from one lemon
- Pinch of cinnamon
- 1 Liter Water
Step by Step Instructions
Step 1
Wash the cherries thoroughly and remove the pits. You can do this by cutting a small slit on one side and gently pushing out the pit.
Juice the lemon to obtain fresh lemon juice.
Step 2
In a large pot, combine the washed cherries, sugar, citric acid, lemon juice, a pinch of cinnamon, and 1 liter of water.
Place the pot on the stove over medium heat and stir gently to dissolve the sugar. The cherries should release their juices as they cook.
Allow the mixture to come to a gentle simmer. You don’t want a rolling boil, just a steady simmer.
Let it cook for about 15 minutes, stirring occasionally. The cherries will soften and release their flavors.
Step 3
After the cherries have cooked, use a hand blender or transfer the mixture to a regular blender to puree until smooth.
Return the puree to the pot and let it sit for about 2 hours. This step allows the flavors to meld and develop.
Step 4
After the resting period, place a sieve or cheesecloth over a clean pot or bowl. Pour the cherry puree through the sieve to strain out the solids and extract the juice.
Transfer the collected juice back to the pot and bring it to a gentle boil.
Let it simmer for about 5-10 minutes to further concentrate the flavors and thicken the syrup slightly.
While the syrup is still hot, use a funnel to pour it into clean glass bottles or jars. Leave a little space at the top.
Seal the bottles or jars tightly with their lids.
Allow the bottles to cool at room temperature before refrigerating.
