Dandelion honey is not made by bees, it’s made from the flowers and sugar.

This honey is a good substitute for vegans.

It has a very similar flavor and colos such as a bee honey. The consistency is thinner.

All you need is dandelion flowers, sugar, water and lemon or orange, the choice is yours.

Make sure not to pick all the dandelions in a field and make sure you leave enough for the bees. They are an importante source of nectar for them.

Ingredients

  • 200 Dandelions

  • 1 organic Lemon

  • 1 liter water

  • 1kg of sugar

    Step by Step Instructions

    Step 1

    Collect the Dandelions and rinse them good in water. If you want to keep the pollen dont wash, just set aside for a half hour to allow any insect to leave the flowers.

     

     

    Step 2

    Gently remove the yellow leaves from the green stems and place then into a large pot, add the water, cut a lemon and add into the bowl.

    Cook for about 10- 15 minutes then leave it soak overnight.

     

     

    Step 3

    Strain away the flowers and the lemon and save the flower water in a pan. Squeez the rest of the water out of the wet flowers.

     

     

    Step 4

    Pour the sugar into the pot with the flower water and let it simmer low, without the lid on. Stir a few times. It will need about 1,5 -2 hours to reach the perfect consistency wich you can check the with a tbsp. Just fill the tbsp. with the honey, let it cool down and try.
