Gingerbread-Spiced Parfaits are a delightful layered dessert perfect for the holiday season. Made with spiced cookie crumbs, a creamy mixture of quark, cream cheese, and gingerbread spices, and complemented by juicy mandarin segments, this no-bake treat is as easy to prepare as it is delicious.

Ingredients
- 200g speculoos cookies (or gingerbread cookies)
- 200g cream cheese, softened
- 200g quark (or Greek yogurt)
- 200ml heavy cream
- 50g coconut blossom sugar (or light brown sugar)
- A few drops of vanilla extract
- 1 tsp gingerbread spice mix (If unavailable, substitute with: 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground cloves, 1/8 tsp ground nutmeg, and a tiny pinch of ground cardamom.)
- 4–5 fresh mandarins, separated into segments
Step by Step Instructions
Step 1
Prepare the Cookie Crumbs:
Place the speculoos cookies in a food processor and grind into fine crumbs. Set aside.
Step 2
Make the Cream Filling:
In a mixing bowl, combine the cream cheese, quark, heavy cream, coconut sugar, vanilla extract, and gingerbread spice mix.
Mix everything together until smooth and well combined. Chill the cream mixture in the refrigerator for 15–20 minutes.
Step 3
Prepare the Mandarins:
Peel the mandarins and carefully separate each segment, ensuring there are no seeds or membrane pieces.
Step 4
Assemble, Chill and Serve:
In serving glasses, add a layer of cookie crumbs to the bottom.
Add a few mandarin segments on top of the crumbs.
Spoon a layer of the cream mixture over the mandarins.
Finish with a sprinkle of cookie crumbs and a few mandarin segments on top for decoration.
Refrigerate the assembled parfaits for at least 30 minutes before serving to allow the flavors to meld and the layers to set.
