Ingredients

  • 100g flour
  • 7g yeast
  • 5ml oil
  • A pinch of salt
  • 55ml water
  • Cream fraiche
  • Cherry tomatoes
  • Arugula (rucola)
  • A pinch of pepper
  • Dried basil
  • Leek or spring onion (optional)

 

 

 

 

    Step by Step Instructions

    Step 1

    In a mixing bowl, combine the flour, yeast, and salt. Mix them together well.

    Make a well in the center of the dry ingredients and add the oil and water. Mix everything together until a dough forms.

    Step 2

    Transfer the dough onto a lightly floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Shape it into a ball.

    Place the dough ball back into the mixing bowl and cover it with a clean kitchen towel. Allow it to rise in a warm place for about 1 hour or until it doubles in size.

    Step 3

    Preheat your oven to 180°C .

    Once the dough has risen, transfer it to a floured surface and roll it out into a thin circle with a diameter of approximately 30 cm (12 inches).

    Carefully transfer the rolled-out dough onto a baking sheet or a pizza stone.

    Step 4

    In a small bowl, mix the cream fraiche with a pinch of pepper and dried basil.

    Spread the cream fraiche mixture evenly over the surface of the dough.

    Slice the cherry tomatoes in half and arrange them on top of the cream fraiche.

    If desired, thinly slice the leek or spring onion and sprinkle it over the tart.

    Step 5

    Place the baking sheet or pizza stone in the preheated oven and bake for about 8-10 minutes, or until the crust is golden and crispy.

    Step 6

    Remove the Tarte Flambée from the oven and let it cool slightly.

    Before serving, you have the option to sprinkle the arugula over the top of the Tarte Flambée before baking for a slightly wilted effect, or after baking for a fresher and crisper texture – the choice is yours!
