Ingredients
For the Muffins:
- 75 g butter (softened)
- 40 ml neutral oil (e.g., sunflower or canola oil)
- 150 g brown sugar
- 2 packets vanilla sugar
- 2 eggs
- 200 g dark chocolate (melted)
- 200 g all-purpose flour
- 4 tbsp cocoa powder (unsweetened)
- 2 tsp baking powder
- 1 pinch of salt
- 175 ml milk
- 100 g chocolate chunks (optional, for extra chocolatey bites)
For the Classic Whipped Cream Topping:
- 300 ml heavy cream (well chilled)
- 2 tbsp powdered sugar
- 2 packs Cream stabilizer
- 1 tsp vanilla extract (optional)
Step by Step Instructions
Step 1
Prepare the Muffins:
Preheat the oven to 160°C (320°F) fan/forced air. Line a muffin tray. Beat butter, oil, sugar, and vanilla sugar until creamy. Add eggs one at a time. Melt the chocolate, let it cool, and mix it in. Combine dry ingredients and alternate adding them with milk to the batter. Fold in optional chocolate chunks, divide into muffin cups, and bake for 20–25 minutes. Let the muffins cool completely.
Step 2
Whip the Cream:
In a chilled bowl, whip the cream with powdered sugar and cream stabilizer until stiff peaks form. Add vanilla extract if desired.
Step 3
Decorate the Muffins:
Spoon the whipped cream into a piping bag and pipe swirls onto the cooled muffins.
