Ingredients
- 6 layers of wafers
- 400g chocolate
- 300g heavy cream
- 200g ground hazelnuts
- 100g ground walnuts
- Maple syrup, to taste (optional)
For the top and sides:
- 1 tablespoon coconut oil
- 300g chocolate
For the Decoration:
- Whole hazelnuts for decoration
Step by Step Instructions
Step 1
In a heatproof bowl, melt 400g of chocolate and the heavy cream over a double boiler or in the microwave, stirring occasionally until smooth.
Step 2
Stir in the ground hazelnuts, ground walnuts, and maple syrup (if using) into the chocolate mixture until evenly incorporated.
Step 3
Spread a generous layer of the chocolate and nut mixture evenly over one wafer layer.
Continue layering wafers and chocolate mixture until all the wafer layers are used, finishing with a wafer on top.
Place something heavy on top of the cake to compress the layers together, then refrigerate for a couple of hours to set.
Step 4
Once set, prepare the chocolate coating by melting 300g of chocolate with 1 tablespoon of coconut oil until smooth.
Pour the melted chocolate mixture over the top and sides of the cake, using a spatula to spread it evenly.
Step 5
Decorate the top of the cake with whole hazelnuts as desired.
Return the cake to the fridge for about an hour to allow the chocolate coating to set completely.
