Ingredients

  • 2 cans of chickpeas (400g each, undrained; approximately 240g each when drained)
  • 60g olive oil
  • 120ml water
  • 60g wheat flour (or any flour of your choice)
  • 10g baking powder
  • 5g salt
  • 1 small onion (about 70g), finely chopped
  • 2 cloves of garlic (about 6g), minced
  • 5g dried herbs (such as oregano, thyme, or rosemary)
  • Fresh herbs (optional, like parsley or cilantro, finely chopped)

      Step by Step Instructions

      Step 1

      Drain and rinse the chickpeas. Finely chop the onion and mince the garlic.

      Step 2

      In a small pan, heat a bit of olive oil over medium heat. Add the chopped onion and minced garlic and sauté until they are soft and translucent, about 5 minutes. Let them cool slightly.

       

      Step 3

      In a blender or food processor, add the chickpeas, sautéed onion and garlic, olive oil, water, flour, baking powder, salt, and dried herbs. Blend until the mixture is smooth and well combined. If you want some texture, you can blend it until it’s almost smooth but still has a few small chunks of chickpeas.

      Step 4

      Preheat your waffle iron according to the manufacturer’s instructions.

      Once the waffle iron is hot, lightly grease it with oil or non-stick spray. Pour enough batter into the waffle iron to cover the surface (about 1/4 to 1/3 cup, depending on the size of your waffle iron). Close the lid and cook for 5-7 minutes, or until the waffles are golden brown and cooked through.

       

      Step 5

      Carefully remove the waffles from the waffle iron. If desired, sprinkle with fresh herbs before serving.

      Tips:

      Consistency: If the batter is too thick, add a little more water, a tablespoon at a time, until it reaches the right consistency.

      Herbs and Spices: Feel free to adjust the herbs and spices to your taste. You can add a pinch of cayenne pepper for a bit of heat or some cumin for an earthy flavor.
