Ingredients

  • 350g carrots 
  • 130g pitted dates
  • 80g oats
  • 40ml maple syrup
  • 50g walnuts 
  • 0.5 tsp cinnamon
  • 30ml plant-based milk
  • Coconut flakes (for rolling)

      Step by Step Instructions

      Step 1

      Peel the carrots and grate them using a food processor.

       

      Step 2

      In a food processor, combine the grated carrots, pitted dates, oats, maple syrup, and cinnamon. Blend until a sticky mixture forms.

      Gradually add the walnuts to the mixture, blending until you achieve a dough-like consistency with some walnut pieces for texture.

      Step 3

      Transfer the mixture to a large bowl.

      Step 4

      Using an ice cream spoon, scoop portions of the mixture and shape them into balls.

       

      Step 5

      Roll each ball in coconut flakes, ensuring an even coating.

      Step 6

      Refrigerate the energy balls for about 30 minutes to firm up.
