Ingredients for the Bread:

  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ cup (120ml) milk
  • 1 ⅓ cups (160g) fresh or frozen blueberries
  • 1 tablespoon flour (for tossing the blueberries)

Ingredients for the Yogurt Lemon Glaze:

  • ½ cup (120g) plain Greek yogurt
  • 2 tablespoons fresh lemon juice

    Step by Step Instructions

    Step 1

    Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.

    Step 2

    Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

    Cream the butter and sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy.

    Add wet ingredients: Beat in the eggs one at a time until well combined. Stir in the lemon juice, lemon zest, and milk until smooth.

    Combine wet and dry ingredients: Gradually add the flour mixture to the wet ingredients, mixing just until combined.

     

    Step 3

    Prepare the blueberries: Toss the blueberries in 1 tablespoon of flour and gently fold them into the batter.

    Bake: Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

    Step 4

    Make the yogurt lemon glaze: In a small bowl, whisk together the yogurt and lemon juice until smooth and creamy.

    Glaze the bread: Once the bread is cooled, drizzle or spread the yogurt lemon glaze over the top.
