This Cake is a perfect alternative when you’re craving something sweet. The combination of natural ingredients like granola, dates, fresh strawberries, and agave syrup provides a deliciously sweet flavor without the need for refined sugars. Using agar agar as a vegan gelatin substitute makes this cake suitable for those avoiding animal products. Ingredients

For the Base:

  • 190g granola
  • 100g dates

For the Filling:

  • 400g fresh strawberries
  • 450g natural yogurt
  • 2-3 tablespoons agave syrup (adjust to taste)
  • 100ml oat milk
  • 30g agar agar powder

For Decoration:

  • Fresh raspberries
  • Fresh blueberries

    Step by Step Instructions

    Step 1

    Prepare the Base:

    Line a 20cm round cake form with baking paper.

    In a food processor, blend the granola and dates until well combined.

    Press the mixture firmly and evenly into the bottom of the lined cake form.

    Step 2

    Make the Filling:

    In a blender, combine the fresh strawberries, agave syrup, and natural yogurt until smooth.

    In a pot, bring the oat milk to a simmer and whisk in the agar agar powder. Cook for about 2-3 minutes until the agar agar is completely dissolved.

    Add the strawberry yogurt mixture to the pot and cook together for a few more minutes, stirring constantly until well combined.

     

    Step 3

    Assemble the Cake:

    Pour the strawberry yogurt mixture over the granola base in the cake form.

    Place the cake in the refrigerator for several hours, or until the filling has set and become firm.

    Decorate:

    Once the cake is set, top with fresh raspberries and blueberries before serving.
