Autumn Quiche with pumpkin

Ingredients

For the quiche dough:

400 grams of wheat flour

a pinch of salt

250g cold vegan margarine

3 tbsp water

For the pumpkin filing:

800g pumpkin cubes

1 red pepper

1 onion

2 cloves of garlic

1 tbsp olive oil (for frying)

1.5 tsp salt

1 tbsp dried basil

1.5 tsp paprika powder

0.5 tsp pepper

2 tbsp pumpkin oil

3-4 tbsp oat drink

 

 

    Step by Step Instructions

    Step 1

    Knead the wheat flour, salt, margarine and water with a hand mixer or with your hands. Leave to rest in a bowl for an hour.

    Grease the quiche pan with the oil or margarine.

    Step 2

    For the leaf liners, set a little less than half of the dough aside.

    Step 3

    Roll out the other half of the dough on a floured surface slightly larger than the quiche pan. Place in the pan and pull over the edges. Prick several times with a fork.

    Step 4

    Wash, quarter and deseed the pumpkin, then cut into cubes and boil in a pot with 800ml water for about 20 minutes. Pour out the water and puree the pumpkin cubes, in a food processor or roughly with a fork, with all the spices and the pumpkin oil.

    Step 5

    Wash, halve, deseed and dice the peppers. Peel and dice the onion and garlic clove and sauté in a pan with olive oil together with the paprika until translucent.

    Step 6

    Pour the pumpkin puree into the quiche pan, add the sautéed peppers, garlic and onions and smooth the surface.

    Step 7

    Roll out the dough for the leaf cutters with a rolling pin, cut out the shapes with the cutters and distribute over the quiche.

    Bake at 200°C for 20 minutes.
