Ingredients
- 200g of thin Asian noodles (e.g., rice noodles, egg noodles, or udon noodles)
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, finely chopped
- 1 small onion, thinly sliced
- 1 carrot, thinly sliced
- 1 red bell pepper, thinly sliced
- 100g of broccoli, cut into small florets
- 100g of sugar snap peas or green beans, sliced
- 200g of tofu, cut into cubes or strips
- 2-3 tablespoons of soy sauce
- 1 tablespoon of oyster sauce (optional)
- 1 teaspoon of sesame oil
- 1 teaspoon of sugar
- A pinch of black pepper
- Fresh cilantro leaves or spring onions for garnish
- Alfalfa sprouts (as desired)

Step by Step Instructions
Step 1
Cook the noodles according to the instructions on the packaging. Most Asian noodles only need to be boiled for 3-5 minutes. Rinse them with cold water after cooking and let them drain.
Step 2
In a large pan or wok, heat the vegetable oil over medium heat. Add the chopped garlic and sauté for 1-2 minutes until it becomes fragrant but not brown.
Add the onion, carrots, bell pepper, broccoli, and sugar snap peas. Stir-fry the vegetables for about 3-4 minutes until they become slightly tender.
Step 3
Move the vegetables to one side of the pan and place the tofu on the free side. Sauté the tofu for about 3-5 minutes until it’s cooked through.
Step 4
Add the drained noodles to the pan and mix them with the vegetables and tofu.
Step 5
In a small bowl, mix together soy sauce, oyster sauce (if using), sesame oil, sugar, and black pepper. Pour this mixture over the noodles and stir everything well.
Step 6
Sauté the noodles, stirring occasionally, for 2-3 minutes until they are thoroughly heated and evenly coated with the sauce.
Serve the stir-fried noodles hot and garnish with fresh cilantro or spring onions. You can also provide lime wedges for squeezing over the noodles to enhance the flavor.
