These Apricot Orange Energy Balls are bursting with flavor and packed with nutritious ingredients to give you a natural energy boost. Made with dried apricots, coconut flakes, almonds, and a hint of orange, they are a delightful snack for any time of the day.

Ingredients

  • 200g dried apricots
  • 55g coconut flakes, plus extra for coating
  • 30g almonds
  • 1 tsp orange powder
  • 100ml water
  • 50ml agave syrup

    Step by Step Instructions

    Step 1

    In a food processor, combine the dried apricots, coconut flakes, almonds, orange powder, water, and agave syrup.
    Pulse the mixture until it forms a sticky dough-like consistency. If the mixture seems too dry, you can add a little more water or agave syrup. If it’s too wet, add more coconut

    Step 2

    Taste the mixture and adjust the sweetness or orange flavor according to your preference by adding more agave syrup or orange powder.
    Scoop out small portions of the mixture and roll them into bite-sized balls using your hands.

     

    Step 3

    Place the extra coconut flakes in a shallow dish.
    Roll each energy ball in the coconut flakes until evenly coated.
    Repeat the process until all the mixture is used.

    Step 4

    Place the energy balls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
    Once chilled, store the Apricot Orange Energy Bites in an airtight container in the refrigerator for up to one week.
