Ingredients
For the Panna Cotta:
- 300 ml heavy cream
- 50 ml milk
- 25 g birch sugar (xylitol)
- vanilla extract (light-colored)
- 5 g powdered gelatin
For the applesauce layer:
- 150 g applesauce (homemade or store-bought)
For decoration:
- Chopped pistachios or mint leaves
- Cinnamon (optional)
Step by Step Instructions
Step 1
Prepare the Panna Cotta:
Sprinkle the powdered gelatin over 2 tablespoons of cold water and let it sit for about 5-10 minutes to bloom.
Heat the cream, milk, birch sugar, and vanilla sugar (or vanilla seeds) in a saucepan over medium heat until hot but not boiling.
Remove the saucepan from the heat and stir in the bloomed gelatin until fully dissolved.
Allow the mixture to cool slightly before pouring it into dessert glasses. Refrigerate the glasses for 2-3 hours or until the Panna Cotta is set.
Step 2
Applesauce Layer:
Once the Panna Cotta has set, evenly spoon the applesauce on top of each glass.

Decoration:
Sprinkle the applesauce with chopped pistachios or garnish with a fresh mint leaf. You can also add a pinch of cinnamon if desired.
