These simple potato waffles are the perfect comfort food for a chilly day. Made with just a few basic ingredients — boiled potatoes, herbs, and spices — they’re crispy on the outside, soft and fluffy on the inside. I used fresh chives from my balcony for extra flavor, but you can use any herbs you like. Topped with a spoonful of sour cream and more chopped chives, they’re delicious as a snack, lunch, or light dinner. No complicated steps, just a cozy, homemade recipe that feels warm and satisfying — especially when the weather outside is grey and rainy.

Ingredients

4–5 medium boiled potatoes (cooled slightly)

Salt & pepper to taste

½ tsp paprika

A handful of fresh herbs (I used chives from my balcony)

Optional: a little butter or grated cheese for extra richness

Sour cream & extra chives for topping

Step by Step Instructions
Step 1
Mash the potatoes:
Boil and slightly cool 4–5 medium potatoes. Mash them in a bowl until smooth, leaving some texture if you like.
Step 2
Season and mix:
Add salt, pepper, paprika, and chopped herbs of your choice — I used fresh chives. Mix everything well. Optional: add a spoon of butter or a bit of grated cheese for extra flavor.
Step 3
Cook in the waffle maker:
Preheat your waffle maker. Spoon in enough of the mixture to cover the surface, close it, and cook until golden and crispy (about 5–8 minutes, depending on your waffle maker).
Step 4
Serve and enjoy:
Top the warm waffles with a dollop of sour cream and a sprinkle of fresh chives. Serve immediately and enjoy!
