Ingredients

  • 1 can of coconut milk (400 ml)
  • 2 eggs
  • 4 heaping tablespoons of sugar (about 60 g, adjust to taste)
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • Optional: 2–3 tablespoons toasted shredded coconut (for topping)

Step by Step Instructions

Step 1

Mix the base:

In a bowl, whisk together the eggs, sugar, cornstarch, vanilla extract, and a pinch of salt until smooth.

Step 2

Warm and combine:

Gently heat the coconut milk in a saucepan until warm (not boiling). Slowly pour it into the egg mixture while whisking constantly to prevent curdling.

 

Step 3

Cook the pudding:

Pour the mixture back into the saucepan and cook over low to medium heat, stirring constantly, until thickened into a creamy pudding (about 5–7 minutes). Do not boil.

Step 4

Set and serve:

Pour into small molds or ramekins. Let cool slightly, then chill in the freezer for 30 minutes to help them set. Transfer to the fridge until serving. Top with toasted coconut or garnish as desired.
