Ingredients
For the base:
- 200g flour
- 100g butter
- 60g sugar
- 1 egg
- Zest of 1 lemon
For the filling:
- 500g quark
- 100g crème fraîche
- 150g double cream cheese
- 2 eggs
- 1 pack (37g) vanilla pudding powder
- Zest of 1 lemon
- 110g sugar
- Halved apricots (preserved or canned)

Step by Step Instructions
Step 1
Prepare the Base:
Combine flour, butter, sugar, egg, and lemon zest in a bowl. Mix with a mixer, then knead by hand until smooth. Chill the dough in the refrigerator for 30 minutes.
Step 2
Prepare the Filling:
In a bowl, mix quark, crème fraîche, Doppelrahmfrischkäse, eggs, vanilla pudding powder, lemon zest, and sugar until smooth.
Step 3
Assemble the Cheesecake:
Grease a 20cm round baking form. Press the chilled dough into the form, covering the base and sides up to halfway. Pour in the cheese mixture, then arrange halved apricots on top.
Step 4
Bake:
Bake in a preheated oven at 180°C (356°F) for about 40 minutes, checking the color after 30 minutes to prevent over-browning. Let the cheesecake cool before serving.
