This easy vegetable soup is packed with fresh ingredients and rich flavors.

Made with homemade vegetable broth, sautéed vegetables, and optional diced beef, it’s a comforting dish for any occasion. 

Ingredients

  • 2 packs of soup vegetables (e.g., carrots, celery, leek, parsley, etc.)
  • 1 liter of homemade vegetable broth (liquid or from cubes, depending on taste)
  • 1–2 potatoes (optional, for a creamier texture)
  • 1–2 tbsp olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs like parsley or chives (optional)

 

Step by Step Instructions

Step 1

Prepare the vegetables:

Wash, peel (if necessary), and cut the soup vegetables into small pieces.

If using potatoes, peel and dice them as well.

Step 2

Sauté the vegetables:

Heat 1–2 tbsp olive oil or butter in a large pot.

Add the chopped vegetables and sauté for about 5 minutes until they release their aroma—this enhances the flavor!

 

Step 3

Add the broth:

Pour in the vegetable broth (either liquid or mixed with water and cubes).

The broth should fully cover the vegetables. Add more water if needed.

Bring the soup to a boil, then reduce the heat.

Let it simmer for about 20–30 minutes until the vegetables are tender.

Step 4

Season to taste:

Adjust the seasoning with salt, pepper, and fresh herbs if desired. Serve the soup hot, garnished with fresh herbs.

If you’d like to add a bit of protein, small-cut beef (like diced beef or beef strips) is a great option. You can sauté the beef in the pot first until lightly browned, then follow the recipe as usual. The beef will cook perfectly while simmering and add a rich, hearty flavor to the soup!
