Ingredients

  • 200g unsalted butter, melted
  • 100g coconut brown sugar
  • 2 tbsp maple syrup
  • 300g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract 
  • A pinch of salt

    Step 1

    Prepare the Dough:

    Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, coconut brown sugar, baking powder, cinnamon, nutmeg, and a pinch of salt until well combined. The coconut brown sugar will add a rich caramel flavor and moisture to the cookies.

    Add Melted Butter: Pour the melted butter into the bowl with the dry ingredients. Mix gently to avoid clumping.

    Incorporate Wet Ingredients: Add the maple syrup and vanilla extract. Using a hand mixer, blend the mixture briefly until just combined. The dough should appear slightly lumpy but cohesive.

    Shape the Cookies:

    Roll the Dough: Divide the dough into small portions and roll each into a ball (about 1 inch in diameter). Place them on a baking tray lined with parchment paper.

    Flatten Each Cookie: Using your palm or the bottom of a glass, gently press each ball down to create a slightly flattened disc.
