Indulge in the vibrant flavors of this Spring Asparagus and Beet Salad, a perfect dish for the season. This salad combines tender green asparagus, lightly sautéed to bring out its natural sweetness, with the earthy richness of pre-cooked red beets. Ingredients

  • 1 bunch of green asparagus
  • 2-3 pre-cooked red beets, roughly diced
  • ½ block of feta cheese, crumbled by hand
  • 1 small onion, sliced
  • Salt and pepper, to taste
  • 1 tablespoon vinegar
  • Sunflower seeds, for topping
  • Pumpkin seeds, for topping
  • Olive oil, for frying

    Step by Step Instructions

    Step 1

    Prepare the Asparagus:

    Clean the green asparagus and trim off the woody bottom part.

    Cut the remaining asparagus into smaller pieces, keeping the tips whole.

    Step 2

    Cook the Asparagus:

    Heat a generous amount of olive oil in a frying pan over medium-high heat.

    Add the asparagus pieces to the pan and sauté for a few minutes until tender but still crisp.

    Assemble the Salad:

    On a large plate, spread out the diced red beets.

    Add the crumbled feta cheese and sliced onion.

    Mix in the sautéed asparagus along with the oil from the pan.
