Ingredients

Ingredients for Pancakes:

  • 150g rolled oats
  • 2 ripe bananas (about 240g
  • 2 eggs
  • 120ml milk (dairy or non-dairy)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)
  • A pinch of salt
  • Cooking oil or butter for the pan

Ingredients for Strawberry Sauce:

  • 200g strawberries, hulled and chopped
  • Juice of 1/2 orange
  • Juice of 1 lime
  • 1-2 tbsp honey

    Step by Step Instructions

    Step 1

    Prepare the Pancake Batter:

    Peel the bananas and break them into chunks.

    In a blender, combine the bananas, rolled oats, eggs, milk, baking powder, vanilla extract, cinnamon (if using), and a pinch of salt.

    Blend until the mixture is smooth and well combined. Let the batter sit for a few minutes to thicken slightly.

    Step 2

    Cook the Pancakes:

    Heat a non-stick non-stick pan over medium heat and lightly grease it with cooking oil or butter.

    Pour small portions of the batter (about 2 tablespoons per pancake) onto the hot skillet, forming mini pancakes.

    Cook for 2-3 minutes on each side, or until bubbles form on the surface and the edges look set. Flip the pancakes and cook for another 2-3 minutes, until golden brown and cooked through.

     

    Step 3

    Prepare the Strawberry Sauce:

    In a small saucepan, combine the chopped strawberries, orange juice, lime juice, and honey.

    Cook over medium heat for about 5 minutes, until the strawberries are soft.

    Puree the mixture until smooth. Ensure the sauce is thick by not adding too much juice.

    Step 4

    Serve:

    Serve the mini oat banana pancakes warm.

    Top with the homemade strawberry sauce.
