I made this cake for a very special occasion 🎂

The combination of berries and pistachios creates a very interesting taste.

If you bake this cake please make sure that you use a vegan cream that is explicitly suitable for whipping.

Ingredients

For the base:

400g wheat flour

1 pack of baking powder

100 ml sunflower oil

200g birch sugar

Juice from one lemon

400ml soda

1 tsp almond extract

 

For the filling:

300ml whipping cream (vegan)

1 tbsp birch sugar

250-300 g frozen berry mix

100g pistachios

 

    Step by Step Instructions

    Step 1

    Preheat the oven to 180°C.

    Step 2

    First mix the dry ingredients together in a large bowl, then add the remaining ingredients, lastly the soda. Mix together briefly and pour into a 20cm round baking pan. Bake for about 30 minutes.

    Step 3

    Allow to cool, remove from the baking pan and then cut horizontally.

    Step 4

    For the filling, add the cream and sugar to the mixing bowl and beat with a hand mixer until stiff.

    Step 5

    Place one cake base on a plate, spread half the cream and half the berry mixture on top of it. Place the second cake layer on top and spread the remaining cream on it, also on the sides. Spread the remaining berry mixture on top and decorate nicely.

    Step 6

    Grind the pistachios in a food processor, then place one portion at a time on a spatula and glue the sides, bottom to top. Also sprinkle some on the top
