Shiitake mushroom sauce with linguine

Shiitake are one of the most effective medicinal plants in Chinese medicine.

They grow on various deciduous trees like maple or walnut and are rich in vitamin B12, D, C and others.

Shiitakes are high in fiber and low in calories and fet.

They taste rich, meaty and buttery when cooked. 🍄

Ingredients

  • 200 g shiitake mushrooms
  • 4 cloves of garlic
  • 1 small onion
  • 2 small spring onions
  • a handful of fresh parsley
  • 150 g vegan creme fraiche
  • 2 tbsp oat milk
  • 1.5 tbsp soy sauce
  • 0.5 tsp nutmeg powder
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tsp basil, dried

In addition:

  • 200 g linguine

Step by Step Instructions

Step 1

Wash the shiitake well, dry it and cut the larger mushrooms in half, leaving the small ones whole. Peel the onion and garlic cloves, halve and finely dice. Clean the spring onions, remove the outermost husk, cut off the dried-up leaf tips, then wash, dry and cut into fine slices. Wash and finely chop the parsley.

 

Step 2

Briefly sear the onion, garlic, spring onion and mushrooms in a pan, then add the vegan cream, oat drink, soy sauce, parsley and all the spices then let simmer for 5 minutes over medium heat.

 

Step 3

Cook the linguine according to the instructions on the packaging, drain and add to the mushroom sauce. Mix together well.
