Overnight Oats are my favorit to go breakfast options. It doesn’t take very much time to prepare and it tastes just amazing.

My base recipe is always the same, the rest leaves alot of space for creativity. There is alots of interesting topping variety made with all kind of fruits, seeds, nuts and jams.

Ingredients

For the Mango flavor:

  • 80 g rolled oats, large sheet
  • 180 ml plant-based milk
  • 1 tbsp coconut cream
  • 1 ripe mango
  • A handful of dried cranberries
  • Juice from 1 lemon
  • 2 tbsp agave syrup
  • 1 tbsp chia seeds

For the Blueberry-Yogurt flavor:

  • 80 g rolled oats, large sheet
  • 180 ml plant-based milk
  • 100 g soy yoghurt
  • 100g fresh blueberries (30g for garnish)
  • 2 tbsp maple syrup

For the Chocolate-Banana-Raspberry flavor:

  • 80 g rolled oats, large sheet
  • 180 ml plant-based milk
  • 1 tbsp hazelnut cream
  • 100g vegan chocolate
  • 50 ml plant-based milk (for melting chocolate)
  • 1 banana
  • A handful of fresh raspberries

For the Apple-Cinnamon flavor:

  • 80 g rolled oats, large sheet
  • 180 ml plant-based milk
  • 1 tbsp almond cream
  • 1 small apple
  • a handful of raisins
  • 1 tsp cinnamon

Step by Step Instructions

Mango Flavor
  1. Weigh the rolled oats, place in a glass jar with the plant-based milk and coconut cream, mix well.
  2. Cut, peel and dice the mango. Place half of the diced mango in a deeper bowl with the lemon juice and agave syrup. Puree everything with a blender, add to the oatmeal and mix well.
  3. Decorate with the remaining mango cubes and cranberries. Refrigerate overnight.
Blueberry- Yogurt Flavor
  1. Weigh the rolled oats and put them in a glass jar with the plant-based milk and mix well.
  2. In a deep bowl, puree 70 g blueberries and maple syrup using an immersion blender, add yogurt and mix together.
  3. Add the yoghurt-blueberry puree to the rolled oats and mix well. Decorate with the remaining blueberries and refrigerate overnight.

 

Chocolate- Banana-Raspberry Flavor
  1. Weigh the rolled oats, put them in a glass jar with the plant-based milk and hazelnut cream, mix well.

  2. Melt the vegan chocolate with 50 ml milk in a small saucepan and add to the oatmeal, mix well.

  3. Slice the banana and decorate with the raspberries.

  4. Place in the fridge overnight.

 

Apple-Cinnamon Flavor
  1. Weigh the rolled oats and put them in a glass jar with the milk, almond cream and cinnamon, mix well.
  2. Wash, halve, core and dice the apple.
  3. Now decorate the oat flakes with the diced apples and the raisins.
  4. Place the jar in the fridge overnight.

 Small Tipp: You can put the overnight oats in the fridge and decorate them the next day.
